I love lamb. Salt, pepper, and lots of garlic- you can't go wrong. And leave it a bit rare, the worst thing you can do to lamb is over cook it! Or try rubbing it with stone ground mustard too. Or marinate it with yogurt and cumin if you like that middle eastern thing. I don't know where that whole mint jelly with lamb thing came from but it's really gross if you ask me... :lol:

I'm intrigued by this new product that you're addicted to. It's got the wheels turning. Hopefully it's legal! :D

Manny, I agree that mint jelly is gross, but true mint sauce, which is made with chopped mint leaves soaked in vinegar, is the real dressing for lamb. It's almost essential for mutton as it has lost a lot of that juiciness that lamb has. Where I come from, lamb is the primary meat, as it's too hilly for cattle. Since I moved to the U.S. I've hardly had any lamb, and I seriously thought about getting some sheep. Then I remembered the feeling that comes with a day wrestling sheep at shearing time and I came to my senses. :|

That's interesting, Graham. I have never heard that before. It makes sense, though. That gooey green jelly must have originated somewhere... :)

I did a little researching and found the real thing in Escoffier's Complete Guide to the Art of Modern Cookery, in case you're interested in making it, D.B.:

"Chop or cut into fine Julienne 50g (2 oz) mint leaves; place in a basin and add 25g (1oz) caster sugar, 1 1/2 dl (5 fl.oz.) vinegar, a pinch of salt and pepper and 4 tbsp. water; mix all the ingredients together."

I'm sure it would be just fine with red wine vinergar, Devil's Brew. Probably pretty nice!

Now you mention it Manny, I remember my old mom putting sugar in it. We would use malt or white vinegar because we Brits tend to like it strong and vinegary, but a wine or cider vinegar would give it a nice lighter bite to it.
