Not sure I want to know what "substitute ham" is, kinda brings back scary memories from school, but that sounds like a good fall meal.

You posted this thread at the perfect time, I had just come in from splitting to get some stuff ready for the smoker.

This is ground beef, some italian sausage, cream cheese, a tiny bit of leftover mozz, diced onion, garlic, and jalapeno, salt, pepper, fennel, oregano, and a bit of tomato sauce....

Sprinkled a little rub on 'em, and covered 'em with bacon. Here they are on the smoker with soon to be chile mashed potatoes.

Now I'm gonna split wood for a couple hours and get hungry!

I get the smoke by putting little apple wood branches between the top of the barrel and the weber.

Matt if you post anymore photos like that in the future, can you put a drool warning in the title? I was sat here slobbering like the dog on the Tom and Jerry cartoons.
It also reminds me to get that smoker built.
No matter how many mistakes you make or how slow you progress, you are still way ahead of everyone who isn’t trying.

I agree Graham, those look so good. My smoker project hit a snag, it was put on hold for the Pizza Oven. I guess I need to start working on it again . I have the right file cabinet with the metal rollers and all the parts I need to do the poject, now it is just a matter of time, and of course the drive to want to get off my Behind and actually do something. :lol: As I get older it seems that I have less and less of that, ;)

Yes you most likely could do that. The project I started uses a different system, not better, not worse, just different. ;) I kind of liked the design, the componants were cheap and easy to obtain, the metal file cabinet was free. It just takes a little time and effort to cut the holes, install the vent, and start to cure the meat for smoking. Like I said before, Time, and Energy. I seem to be running short on both of those valuable commoditys at this point in my life. :lol:
