This past autumn, we bought a large quantity of sweet potatoes directly from a farmer that grows them commercially. Since then, sweet potatoes have become a staple in our home. I started baking as many as possible at one time and eating them as often and in as many different ways as possible.

One really tasty way is to mash one up and add it to a bowl of oatmeal along with butter and brown sugar.

It tastes an aweful lot like sweet potato pie.

Thanks for the great idea. Love me some sweet potato pie! Used to have a friend who made them in muffin pans... They were bite-sized and delicious!

I grew a few in my greenhouse, and hope to expand on that program this year. You warm weather folks get all the best produce. I'm going to work at it though. They keep well, and man, that does sound like a good breakfast.
